Sehranzi Zarda, Degi Korma And Badami Khoya Doodh by Chef Gulzar

Ingredients for Sehranzi Zarda:

  • Rice 250 gm
  • Sugar 1/2 cup
  • Kewra essence few drops
  • Small cardamom 4-5
  • Khoya 1/2 cup
  • Dry fruits 1/2 cup
  • Yellow food color 1 pinch
  • Green food color a pinch
  • Silver paper as required
  • Marba as required
  • Clarified butter 1 cup

Method:

  1. Wash rice and soak for 3 hours.
  2. Then boil rice 1/4 with kewra essence.
  3. Put heat butter in one pan and roast small cardamom.
  4. Then add water as requirement and sugar and cook well.
  5. When sugar dissolves, add rice, yellow color and khoya and mix it.
  6. Now divide rice into 3 portions and add zarda color, green color, yellow color, marba and dry fruit in each portion.
  7. Then again mix it and simmer it.
  8. When is simmer is complete, take out in dish, garnish with silver paper and serve.

Ingredients for Degi Korma:

  • Beef 1/2 kg
  • Yogurt 250 gm
  • Oil 1 cup
  • Onion 3-4
  • Cloves 5 -6
  • Small cardamom 8 to 10
  • Kewra essence few drops
  • Coriander powder 1 tsp
  • All spice powder 1 tsp
  • Black peppercorn 1 tsp
  • Red chili powder 1 tbsp
  • Turmeric powder 1/2 tsp
  • Ginger garlic paste 3 tbsp
  • Salt  to taste

Method:

  1. Heat oil in one pot, make onion brown, take out half and spread on tissue paper.
  2. Now add ginger garlic paste and beef in this oil and roast it nicely.
  3. Then add whole red chili, cloves, small cardamom and water as required and tender mutton.
  4. Now beat yogurt, remaining onions, chopped red chili, chopped coriander, chopped garam masala, chopped turmeric and salt nicely, cover it and leave for simmer.
  5. When simmer is done, add kewra essence, mix it, take out in dish and serve.

Ingredients for Badami Khoya Doodh:

  • Milk 1/2 kg
  • Khoya 125 gm
  • Sugar 1/2 cup
  • Almonds and pistachio  50 gm

Method:

  1. Add milk and sugar in pan and cook until sugar is dissolved.
  2. Now add khoya, mix it and cook until it becomes thick.
  3. Then add almonds and pistachio, mix it, remove from stove and chill it.
  4. Now fill in empty bottle and chill in fridge.
