Khara Masala Kaleji, Shinwari Karahi And Kalonji Paratha by Chef Gulzar

Ingredients for Shinwari Karahi:

  • Chicken 1/2 kg
  • Tomatoes 1/2 kg
  • Small green chilies 5-6
  • Big green chilies 5-6
  • Black pepper 1 tsp
  • Crushed cumin 1 tsp
  • Ginger garlic paste 2 tbsp
  • Oil to fry
  • Salt to taste

Method:

  1. Put oil or ghee in karahi pan. Then put chicken and roast it. Then take out its oil.
  2. Now put tomato, green chilies and ginger garlic paste, mix well and tender it.
  3. Now put whole green chilies, salt and black pepper, mix well and roast.
  4. Then take out in serving dish, garnish with green chilies and coriander.
  5. Now serve shinwari karhai with hot tandoori naan.

Ingredients for Khara Masala Kaleji:

  • Chicken liver 1/2 kg
  • Yogurt 1/2 kg
  • Green coriander 1/2 bunch
  • Green chilies 5-6
  • Black pepper 1 tsp
  • Fenugreek seeds 1 tsp
  • Fennel seeds 1 tsp
  • Crushed coriander 1 tbsp
  • Crushed cumin 1 tbsp
  • Onion seeds 1/3 tsp
  • Turmeric 1/2 tsp
  • Ginger garlic paste 2 tbsp
  • Red chili flakes 2 tbsp
  • Clarified butter/oil 2-3 tbsp
  • Salt to taste

Method:

  1. First, wash chicken liver.
  2. Add liver, ginger garlic paste, yogurt, red chili flakes, black pepper, crushed coriander, crushed cumin, fenugreek seeds, fennel seeds, onion seeds, turmeric, green chillies and salt in one pan and roast it.
  3. When gravy becomes thick and masala leaves oil, simmer it.
  4. In end, put green coriander, mix it, take out in dish and serve.

Ingredients for Kalonji Paratha:

  • Flour 1/2 kg
  • Onion seeds 1 tsp
  • Clarified butter 2-3 tbsp
  • Oil to fry
  • Salt to taste

Method:

  1. Add onion seeds, salt and ghee in flour and knead with flour.
  2. Then make portions and roll thin like puri.
  3. Now heat oil in pan and fry paratha.
  4. Kalonji paratha is ready.
