Zafrani Zarda, Qandhari Mutton And Dam Ki Biryani by Chef Zakir

Ingredients For Qandhari Mutton:

  • Mutton  1/2 kg
  • Pomegranate nectar 2 cup
  • Yogurt  250 gm
  • Onion chopped 1
  • Ginger garlic paste  2 tbsp
  • Chili powder  1 tbsp
  • Nutmeg mace powder 1/2 tsp
  • Cardamom powder  1/4 tsp
  • Saffron  1 packet
  • Milk  125 ml
  • Salt  to taste
  • Ghee  1/2 cup
  • Almond boiled 50 gm
  • Coriander powder 1 tbsp
  • All spice powder  1/2 tsp

Method:

  1. First pour oil in a pan, add ghee, ginger garlic paste, chopped onion, mutton, roast it and make it color golden.
  2. Then add red chili powder, chopped nutmeg mace, chopped coriander, chopped cardamom, chopped garam masala  roast it for 1 to 2 minutes.
  3. Now add beaten yogurt, tamarind juice, cover and let it cook.
  4. After 25 to 30 minutes when the mutton starts to tender then dry the gravy.
  5. Then add boiled almonds, milk, saffron mix it well then serve.

Ingredients For Dam Ki Biryani:

  • Chicken boneless 1/2 kg
  • Rice  1/2 kg
  • Coriander leaves  1/4 bunch
  • Mint leaves 1/4 bunch
  • Onion 1
  • Papaya paste  2 tbsp
  • Yogurt  250 gm
  • Dried plum 100 gm
  • Kewra 3 tbsp
  • Saffron  1 packet
  • Nutmeg mace powder 1/2 tsp
  • Cardamom powder  1/2 tsp
  • Cumin seeds 1 tbsp
  • Cumin powder 1 tbsp
  • Coriander powder  1 tbsp
  • Mix whole spices as required
  • Turmeric 1 tbsp
  • Yellow color  a pinch
  • Chili powder  2 tbsp
  • Salt  to taste
  • Butter 2 tbsp
  • Ghee  1/2 cup

Method:

  1. First add chicken boneless cubes, place them in a bowl.
  2. Along papaya paste, yogurt, whole cumin, chopped cumin, chopped coriander, turmeric, chopped red chili, salt marinate it well.
  3. Now pour ghee, add garam masala, add onions make them golden brown and turn off the stove.
  4. Then add onions spread chicken on it.
  5. Now add coriander, mint chops spread plum.
  6. Then add nutmeg mace, sprinkle chopped cardamom on its top.
  7. Now add warm water, salt rice boil it well.
  8. Then spread rice on chicken.
  9. Then spread rice and then 1 layer of rice.
  10. Then put melted butter, kewra, pinch of yellow color simmer it well.
  11. Keep its temperature high.
  12. When it starts to steam, then  simmer it for 8 to 10 minutes.
  13. Tasty dam biryani is ready.

Ingredients For Zafrani Zarda:

  • Sela rice 300 gm
  • Water 3-4 glass
  • Cinnamon 1
  • Cloves  4-5
  • Saffron  1 packet
  • Ghee  4 tbsp
  • Cardamom powder 1 tsp
  • Nutmeg powder 1/4 tsp
  • Caster sugar  100 gm
  • Cashew nut 25 gm
  • Pistachios 25 gm
  • Almond  25 gm
  • Raisin 50 gm
  • Yellow color 1 tsp
  • Orange skin  1 tbsp

Method:

  1. First add rice in water and keep it in water for 1 1/2 hour.
  2. Now pour water, in a pan, cinnamon pieces, cloves.
  3. Along pinch of yellow color.
  4. When water becomes hot then add rice and cook till boils.
  5. Then take out the rice from pan after all water evaporates.
  6. Now pour ghee, orange skin, caster sugar, almonds, pistachio, cashew nuts, raisin and add saffron.
  7. When the sugar is saturated then add rice, chopped cardamom, chopped nutmeg mace mix it well, let it cook on simmer.
  8. Remove its cover after 8 to 10 minutes, mix it well and then serve.
