Ingredients for Strawberry Pie:

For Pie Crust:

  • Flour 1-1/2 cups
  • Salt 1/2 tsp
  • Caster sugar 1-1/2 tsp
  • Unsalted butter 1/2 cup
  • Ice water 3-4 tbsp

For Filling:

  • Ripe strawberries 1 cup
  • Chocolate melted 1/2 cup
  • Strawberry jelly 2 packets
  • Hot water 2 cups
  • Whipped cream to decorate

Method:

  1. Cut very cold unsalted butter into 1/2 inch cubes.
  2. Mix the flour with salt and caster sugar, add in very cold butter using a knife.
  3. Once butter is very well mixed in add cold water and mix to form a dough.
  4. Keep aside wrapped in cling for a few minutes and then roll out onto a pie plate and blind bake the pie crust (placing grease proof paper and baking beans on the crust) at 180 degrees C for 15-20 minutes, remove when golden and cool.
  5. Brush with warm chocolate over it and let set.
  6. Layer sliced strawberries onto the pie crust.
  7. Dissolve in 1 cup hot water a packet of strawberry jelly crystals.
  8. Pour lukewarm water jelly over the strawberries.
  9. Place the pie in the refrigerator.
  10. Chill for few hours until the jelly glaze sets.
  11. Serve with big dollops of whipped cream over the pie.
