Kulfi by Chef Meadha Rahat

Ingredients:

  • Milk 2 liter
  • Cream 1-1/2 cup
  • Salt 1 pinch
  • Cardamom seeds 5
  • Almond 8-10
  • Kewra water 1 tsp
  • Semolina 2 tbsp
  • Arrowroot 2 tbsp
  • Sugar 1 cup
  • Almond, Pistachio 1/2 cup
  • Khoya 300 gm
  • Falooda vermicelli for garnish
  • Green color as required

Method:

  1. Put sugar in milk and boil it. Then add cardamom powder.
  2. When it boils, put semolina, khoya and arrowroot
  3. Beat cream.
  4. Now remove kulfi mixture from stove, put in deep pan and take out when cold.
  5. Now mix cream in it, put in ice cream machine, use for 30 minutes until mixture becomes thick and add almonds.
  6. Take out in serving bowl.
  7. Serve with falooda vermicelli.
