Irish Tea Cake by Zarnak Sidhwa

Ingredients:

  • Butter 1/2 cup
  • Sugar  1 cup
  • Eggs 2
  • Vanilla essence 1-1/2 tsp
  • Flour 1-3/4 cups
  • Baking powder 2 tsp
  • Salt 1/2 tsp
  • Milk 1/2 cup
  • Icing sugar 1/4 cup

Method:

  1. Preheat oven to 175 degrees C.
  2. Grease and flour a 9 inch round pan.
  3. In a medium bowl, cream together the butter and sugar until light and fluffy.
  4. Beat in the eggs, one a time then stir in the vanilla.
  5. Combine the flour, baking powder and salt, stir into the batter alternately with the milk.
  6. If the batter is too stiff, a tablespoon or two of milk may be added.
  7. Spread the batter evenly into the prepared pan.
  8. Bake for 30-35 minutes in the preheated oven, until a toothpick into the center comes out clean.
  9. Cool in a pan on a wire rack, and then turn out onto a serving plate.
  10. Dust with icing sugar right before serving.
