Cherry Coconut Cake by Shireen Anwer

Ingredients:

  • Butter 8 oz
  • Sugar 1-1/2 cup
  • Glazed cherries 1/2 cup
  • Eggs 4 separated
  • Flour 3-1/2 cup
  • Baking powder 1 tbsp
  • Orange juice 1/2 cup
  • Desiccated coconut 1/2 cups
  • Flaked coconut 4 tbsp

Method:

  1. Beat butter and sugar in one bowl until light and fluffy.
  2. Now put egg yolks one by one and beat it nicely.
  3. Now strain desiccated coconut, flour and baking powder.
  4. Then add one by one in mixture with orange juice, cherries and some flour.
  5. Now put in cake mixture and mix it.
  6. Then beat egg whites until it is mixed nicely.
  7. Now fold in batter and mix it nicely.
  8. Then grease pan and put mixture in it.
  9. Now sprinkle flaked coconut and bake on 180 degrees C for 1 hour.
