Lava Cake by Zarnak Sidhwa

Ingredients:

  • Butter as needed
  • Egg yolks 2
  • Eggs 2
  • Caster sugar 3 tbsp
  • Chopped dark chocolate 3-1/2 ounces
  • Butter 5 tbsp
  • Cocoa powder 4 tsp
  • Flour 3 tbsp
  • Salt 1 pinch
  • Vanilla essence 1/4 tsp
  • Icing sugar (to dust) 2 tbsp

Method:

  1. Whisk together egg yolks, eggs, and sugar in bowl until light.
  2. Melt chocolate and butter in double boiler or microwave oven.
  3. Stir melted chocolate mixture into egg and sugar mixture until combined.
  4. Sift cocoa powder, flour, and salt into mixture, stir to combine into batter.
  5. Add vanilla essence.
  6. Divide batter evenly between 4 greased ramekins, tap gently on counter to remove any air bubbles.
  7. Refrigerate for 30 minutes.
  8. Arrange ramekins in a tin or casserole dish.
  9. Pour enough hot water into casserole dish to reach halfway up sides of ramekins.
  10. Bake in preheated oven at 220 degrees C for 15-18 minutes.
  11. Loosen the edges from ramekin with a knife.
  12. Invert each cake onto plate and dust with powdered sugar. Serve immediately.
