Indonesian Rice by Zarnak Sidhwa

Ingredients:

  • Rice (boiled and cooled) 3 cups
  • Boneless chicken (thin strips) 250 gm
  • Eggs 3
  • Oil 2 tbsp
  • Chopped onion 1
  • Chopped green chillies 2
  • Chopped garlic 2 cloves
  • Chopped spring onion 1
  • Coriander seeds 1 tsp
  • Cumin powder 1 tsp
  • Prawns 250 grams
  • Soya sauce 3 tsp
  • Salt to taste

Method:

  1. Break eggs in bowl, add salt and whisk well.
  2. Heat oil, add eggs and make omelets.
  3. Slice into thin strips and set aside.
  4. Heat oil in wok, add onions, green chillies, garlic, and spring onion. Saute quickly.
  5. Add coriander seeds and cumin powder.
  6. Saute for 2 minutes, add chicken strips and cook till done.
  7. Add prawns add saute quickly.
  8. Add cooked rice, omelet strips, soya sauce and salt.
  9. Toss well and stir fry quickly.
  10. Serve hot.
