Paneer Chaat by Zarnak Sidhwa

Ingredients:

For Chutney:

  • Green chilies 100 gm
  • Roasted ground sesame 3 tbsp
  • Jaggery 3 tbsp
  • Thick tamarind pulp 150 ml
  • Chili powder 1 tsp
  • Turmeric powder 1/4 tsp
  • Salt 2 tsp
  • Sesame oil 5 tbsp
  • Mustard seeds 1/2 tsp
  • Fenugreek seeds 1/2 tsp

For Paneer Chaat:

  • Paneer cubes 400 gm
  • Lemon juice 2 tbsp
  • Dried mint 2 tsp
  • Roasted ground cumin 1/4 tsp
  • Salt to taste
  • Chaat masala 2 tsp
  • Chopped coriander 2 tbsp

Method:

  1. For chutney: Stir sesame powder and jaggery into tamarind pulp.
  2. add chili powder and turmeric powder with salt.
  3. Simmer over moderate flame for 5 minutes.
  4. Heat 1 tbsp oil and saute mustard seeds and fenugreek seeds for few seconds before adding to tamarind mixture.
  5. Heat remaining oil.
  6. Fry slit green chilies until tender.
  7. Add tamarind mixture to pan.
  8. Stir to combine. Cool.
  9. For paneer chaat: Combine all ingredients.
  10. Season and pour over paneer.
  11. Chill before serving with chutney.
