Pineapple Bundt Cake by Shireen Anwer

Ingredients:

  • Butter softened 8 oz
  • Sugar 1-1/2 cup
  • Eggs beaten 2
  • Egg whites 2
  • Pineapple essence 1/2 tsp
  • Flour (sieved) 2-2/3 cups
  • Baking powder (sieved) 1 tsp
  • Pineapple (crushed & un-drained) 8 oz

For Glaze:

  • Icing sugar 1 cup
  • Milk 2 tbsp
  • Pineapple essence 2 drops

Method:

  1. Beat butter and sugar until light and fluffy.
  2. Then put eggs, egg whites, pineapple essence, flour and baking powder mixture, put all ingredients and beat it nicely.
  3. Then add this mixture in butter mixture.
  4. Stir pineapple crushed.
  5. Now put in 10 inch loaf pan and bake on 180 degrees C for 55 minutes.
  6. Then take out from pan, before keeping on wire rack, cook for 10 minutes.
  7. For glaze: Mix all ingredients in bowl and put on cake.
