Ingredients:

For Base:

  • Flour 8 oz
  • Butter 4 oz
  • Caster sugar 2 oz
  • Egg yolk 1
  • Vanilla essence 1 tsp

For Filling:

  • Butter 4 oz
  • Sugar 4 oz
  • Eggs 2
  • Coconut powder 2 oz
  • Flour 2 oz
  • Baking powder 1 tsp
  • Coconut essence 1/2 tsp

Method:

  1. For base: Beat butter and sugar until light and fluffy.
  2. Now add egg yolk and beat more.
  3. Now fold vanilla essence in flour, knead it little and cool it for 15 minutes.
  4. Now roll this dough in 9 inch tart tray and spread it.
  5. Now spread strawberry jam on tart base, spread filling and bake on 180 degrees C for 25 minutes until it surface is light golden.
  6. For filling: Beat butter and sugar until light and fluffy.
  7. Now add egg yolks one by one and beat it.
  8. Then put coconut essence and fold stiff egg whites.
  9. Then sieve flour and baking powder, mix coconut powder and fold in butter mixture.
  10. Now put this filling on strawberry jam and bake it.

Coconut Jam Tart is a Baked Dish. It is Sweet Tart, filled with Coconut.
