Chicken Pizziola Sliders by Zarnak Sidhwa

Ingredients:

  • Flour 2 cups
  • Baking powder 1 tbsp
  • Salt 1 tsp
  • Garlic powder 1 tsp
  • Dried oregano 1 tsp
  • Cold butter cubed 1/2 cup
  • Milk 3/4 cup - 1 cup

For Chicken:

  • Chicken breast 3
  • Butter 4-5 tbsp
  • Flour 1 cup
  • Salt 1/2 tsp
  • Salt 1 tsp
  • Black pepper 1/2 tsp
  • Paprika 2 tsp
  • Pepperoni slices as required
  • Pizza sauce 2 cups
  • Shredded mozzarella cheese 2 cups
  • Chopped parsley for garnish

Method:

  1. In large bowl, combine flour, baking powder, salt, garlic powder and oregano.
  2. Add butter and cut in with pastry cutter or fork until crumbly.
  3. Gradually stir in milk, just so that dough comes together, but don't overwork the dough.
  4. Wrap with plastic and set in fridge to rest for few minutes.
  5. Roll dough, cut out 2 inch circles with cookie cutter.
  6. Place on greased baking sheet and bake at 180 degrees C for 8-10 minutes until lightly golden brown.
  7. Cut chicken in same size as your biscuits.
  8. Combine flour, salt, black pepper and paprika in bowl.
  9. Add chicken pieces and mix until well coated.
  10. Heat butter, add marinated chicken and cook till done.
  11. To assemble sliders: Slice biscuits in half.
  12. Spread about 1 tbsp of pizza sauce on bottom layer.
  13. Place chicken on top of sauce.
  14. Top chicken with another tbsp of pizza sauce, pepperoni slice and cheese.
  15. Sprinkle parsley, top with your top biscuit and serve.

Chicken Pizziola Sliders is a baked dish. The biscuits are topped with chicken, pizza sauce, pepperoni and cheese.
