Ingredients:

  • Butter 4 oz
  • Egg 1/2 to 1
  • Flour 6 oz
  • Caster sugar 4 oz
  • Lemon essence 1/2 tsp

For Lemon Cream:

  • Icing sugar 4 tbsp
  • Butter 1 tsp
  • Lemon essence few drops
  • Yellow color few drops
  • Lukewarm water as required

Method:

  1. Beat butter and sugar until light and creamy.
  2. Now add egg and beat more.
  3. Fold flour in mixture, make dough and keep in fridge for 15 minutes.
  4. Then take it out, roll dough, cut with any cutter, keep on baking tray and bake on 180 degrees C for 15 minutes.
  5. Now take it out and cool it.
  6. For lemon cream: Mix all ingredients nicely.
  7. Now spread cream on biscuits, cover with second biscuit, press lightly and serve.
