Chana Kishmish Pulao

Ingredients:

  • Kabuli chickpeas 1/2 kg
  • Raisins 250 gm
  • Green chilies 4
  • Finely chopped onion 4
  • Small cardamom 6
  • Oil 1 cup
  • Yogurt 1/2 cup
  • Sela rice 2-1/2 cup
  • Black cumin 1 tsp
  • Ginger garlic paste 1 tbsp
  • Butter 2 tbsp
  • Mint leaves few
  • Salt to taste

For Stock:

  • Whole onion 1
  • Whole garlic 1
  • Water 4 cups
  • Whole spice powder few
  • Fennel 1 tbsp
  • Whole coriander 2 tbsp
  • Salt to taste

Method:

  1. Put all ingredients of stock in pot and make stock.
  2. Now heat oil in second pot, fry onion until golden brown and take out half.
  3. Then put ginger garlic paste, small cardamom, black cumin, mint leaves and yogurt in half onion, roast it slightly and add soaked chickpeas.
  4. Now roast chickpeas slightly and put soaked raisins.
  5. Then roast it little and add stock.
  6. When stock boils, put soaked rice.
  7. Then add salt, stir it and cover it.
  8. When water dries, simmer it and put butter.
  9. When steam comes up, take out in dish, put remaining brown onion and serve with raita.

Chana Kishmish Pulao is wonderful dish. It is prepared with sela rice. The combination of chickpeas & raisins is amazing.
