Ingredients:

  • Butter 5 oz
  • Caster sugar 5 oz
  • Eggs 2
  • Self raising flour 5 oz
  • Lemon rind 1 tsp
  • Lemon juice 2 tbsp
  • Orange juice 2 tbsp

For Topping:

  • Icing sugar 5 oz
  • Water 2 tbsp
  • Yellow color few drops

Method:

  1. Beat butter and sugar until light and creamy.
  2. Now put eggs, flour, lemon juice and orange juice and beat until smooth.
  3. Then put lemon rind, put mixture on paper cases and bake for 15 minutes on 180 degrees C.
  4. Then take out on wire rack and cool it.
  5. For topping: Sieve icing sugar.
  6. Now add water and beat until smooth.
  7. Add yellow color in icing sugar, spread on cup cakes and serve.

Citrus Bursts is delicious cup cakes. It is prepared with lemon & orange juice. You must try this dessert and serve with guest & family members.
