Roasted Cauliflower Soup

Ingredients:

  • Olive oil 3 tbsp
  • Butter 4 oz
  • Cauliflower 1
  • Garlic 1 pod
  • Salt 1 tsp
  • Salt, Black pepper to taste
  • Milk 1 cup or as required
  • Vegetable or Chicken stock 8 cups
  • Onion 1
  • Brown sugar 1 tsp
  • Croutons for serving
  • Cheese for topping
  • Nutmeg pinch

Method:

  1. Heat oven to 180 degrees C.
  2. Now cut cauliflower.
  3. Now toss with 2 tbsp olive oil.
  4. Then sprinkle salt and roast in oven for 45 minutes or till golden.
  5. Now put oil on garlic pod and roast in this tray.
  6. When garlic cools, peel it.
  7. Now melt butter in pan and saute onion until brown.
  8. Then add brown sugar, roasted cauliflower and garlic.
  9. Then add stock, cover it and cook for 1 hour.
  10. Now use hand blender and smooth it.
  11. Now add milk and mix it nicely.
  12. Then add nutmeg.
  13. Put cheese on croutons and melt it in oven for 2 minutes.
  14. Then serve with hot soup.
