Ingredients:

  • Digestive biscuits 200 gm
  • Butter 100 gm

For Filling:

  • Cream cheese 400 gm
  • Cream 200 ml
  • Sugar 150 gm
  • Eggs 4
  • Vanilla essence 1 tsp
  • Caster sugar 2 tbsp

For Salted Caramel:

  • Sugar 120 gm
  • Cream cheese 400 gm
  • Cream 80 ml
  • Salted butter 30 gm

Method:

  1. For salted caramel: Put cream in saucepan, heat it and keep it aside.
  2. For golden caramel: Put sugar in steel saucepan, cook it, close stove and mix butter in cream.
  3. Now mix all ingredients together and keep it aside.
  4. For cheesecake: Mix biscuits with butter, keep in pan and refrigerate.
  5. Then whisk eggs, caster sugar and vanilla essence together.
  6. Now mix cream cheese with cream in it and whisk until smooth.
  7. Now put mixture on cookie base.
  8. Then bake in oven on 170 degrees C for 40 minutes.
  9. Now cool it overnight in refrigerator.
  10. Then put salted caramel and serve.

Cheesecake is wonderful dessert. First layer is of digestive biscuits, second layer is of cream cheese & third layer is of salted caramel. It is served usually in wedding parties.
