Arabian Eggplant Salad

Ingredients:

  • Eggplant round 500 gm
  • Chopped garlic 2-3 cloves
  • Chopped tomato 1
  • Onion 1 cup
  • Coriander leaves or Parsley 1/2 cup
  • Oil for frying
  • Salt to taste

For Dressing:

  • Crushed black pepper 1 tsp
  • Lemon juice 1 tbsp
  • Olive oil 1/2 cup
  • Salt to taste

Method:

  1. For dressing: Add all ingredients in mixing bowl and mix it nicely.
  2. Dressing is ready.
  3. For salad: Cut eggplant into round slices, put salt and fry in hot oil.
  4. Then take it out and keep it aside.
  5. Now add eggplant slice, tomato, onion, garlic and coriander leaves in mixing bowl and mix it nicely.
  6. Then take out in platter, put dressing and serve.

Arabian Eggplant Salad is healthy salad. It is prepared in Arabic style. It is topped with dressing and serve.
