Achari Masala Pulao

Ingredients:

  • Rice 1/2 kg
  • Chicken 1/2 kg
  • Oil 1-1/2 cup
  • Onions 2
  • Ginger garlic paste 2 tbsp
  • Whole mix spice 1 tbsp
  • Bay leaves 3
  • Small cardamom 6
  • Tomatoes 2
  • Yogurt 1 cup
  • Fennel seeds 1 tbsp
  • Onion seeds 1 tbsp
  • Fenugreek seeds 1 tsp
  • White cumin 1-1/2 tsp
  • Ajinomoto 1 tsp
  • Green chilies 6
  • Lemon 1
  • Mint leaves 1/2 bunch
  • Kewra few drops

For Stock:

  • Chicken 1/2 kg
  • Garlic 4 cloves
  • Ginger 1 inch
  • Fennel seeds 1 tbsp
  • Whole coriander 1 tbsp
  • Nutmeg & mace 1 tbsp

Method:

  1. Add 5 cups water, chicken and all stock ingredients in pot, cook for 30 minutes and soak rice for 1 hour.
  2. Then heat oil in big pot, fry onion, take it out, put ginger garlic paste, mix whole spice and bay leaves in remaining oil, roast it, add yogurt and tomatoes and roast it nicely.
  3. When oil comes, add achar masala, ajinomoto, salt, green chilies and stock spices.
  4. When it boils, add rice and cook until water dries.
  5. Put fried onions, lemon slices, kewra and mint leaves, simmer it for few minutes and serve.
