Peanut Butter Waffles

Ingredients:

  • 2 and 1/4 cups flour
  • 4 teaspoons baking powder
  • 1/2 cup peanut butter
  • 1 and 1/2 tablespoons sugar
  • 2 eggs-beaten
  • 2 and 1/4 cups whole milk
  • 1/4 cup vegetable oil
  • 1/4 teaspoon salt
  • Melted butter

Method:

  1. Preheat a waffle iron.
  2. In a bowl, mix the flour, baking powder and salt in a bowl.
  3. In a separate bowl, mix the peanut butter, sugar, eggs, milk and oil. Add this to the flour mixture.
  4. Brush the waffle iron with butter. Pour batter onto the waffle iron.
  5. Cook until the waffle is golden brown and a toothpick inserted into the middle comes out clean, approximately 2-3 minutes.
  6. Serve hot with maple syrup and butter or fresh berries.
