Sambhar, Madras Mutton And Madrasi Rice by Chef Gulzar

Ingredients for Sambhar:

  • Spinach 150 gm
  • Yellow lentil 150 gm
  • Red lentil 150 gm
  • Ginger garlic paste 2 tbsp
  • Green chilies 4 to 5
  • Onion 1
  • Turmeric powder 1 tsp
  • Red chilli 1 tbsp
  • Salt to taste

For Making Masala:

  • Ginger garlic paste 2 tbsp
  • Green chilies 4 to 5
  • Crushed onion seeds 1 tbsp
  • Red chili crushed 1 tbsp
  • Cumin powder 1 tsp
  • Fenugreek seed 1/3 tsp
  • Carom seed 1/3 tsp
  • Oil 2 to 3 tbsp
  • Salt to taste

For Bhagar:

  • Whole red chili 4 to 5
  • Curry leaves 5 to 6

Method:

  1. Add spinach, yellow lentil, red lentil, ginger garlic paste, green chilies, turmeric, onion, red chili crushed and salt in one pot and cook until when spinach and lentil are tendered.
  2. Now mash it and keep it aside.
  3. For making masala: Heat oil in one pan and fry ginger garlic paste.
  4. Then fry green chilies, cumin powder, red chili crushed, carom seeds, fenugreek seed and salt and roast it.
  5. Now add in spinach mixture, mix it nicely and cook it.
  6. When all ingredients are mixed together, take out in dish, give bhagar to whole red chillies and curry leaves and serve it.

Ingredients for Madras Mutton:

  • Mutton 1 kg
  • Grated coconut 2-3 tbsp
  • Ginger garlic paste 2 tbsp
  • Yogurt 1 cup
  • Onion Paste 1 cup
  • Poppy seed 2 tsp
  • Onion seed 1 tsp
  • Coriander powder 1 tsp
  • Turmeric paste 1 tbsp
  • Red chili paste 2 tbsp
  • Fenugreek seed 1/2 tsp
  • Whole cumin 1/2 tsp
  • Curry leaves 5-6
  • Lemon juice 2 tbsp
  • Tamarind paste 2 tbsp
  • Oil 1/2 Cup
  • Salt to taste

Method:

  1. Heat oil in one pan, put fenugreek seed, onion seeds and whole cumin and fry it.
  2. Then put onion paste and fry it.
  3. Now add ginger garlic paste and fry it.
  4. After that, put mutton and roast it.
  5. Then add grated coconut and water as required and roast it.
  6. Now put red chilli paste, poppy seeds, coriander powder and salt and cook it.
  7. Now add lemon juice and tamarind paste and cook on low flame.
  8. In end, take out in dish, give bhagar of curry leaves and serve,

Ingredients for Madrasi Rice:

  • Boiled rice 2 cup
  • Ginger garlic paste 1 tbsp
  • Turmeric powder 1/2 tsp
  • Tamarind paste 2 tbsp
  • Onion seed 1/2 tsp
  • Black pepper 1/2 tsp
  • Clove 4 to 5
  • Bay leaves 1 to 2
  • Clarified butter 2 to 3 tbsp
  • Salt to taste

Method:

  1. Clean rice and wash it.
  2. Now soak it for 1 to 2 hours.
  3. Then strain rice, boil it, take it out and keep it aside.
  4. Now heat ghee in one pan and fry onion seed, black pepper, clove and bay leaves.
  5. Then add ginger garlic paste and roast it.
  6. Then add turmeric powder, salt and rice, mix it and cook on low flame.
  7. Now keep on simmer.
  8. When simmered is complete, take out rice in dish and serve.
