Ras Gullay And Kofta Nihari by Chef Zakir

Ingredients For Kofta Nihari:

  • Mutton bones  1/2 kg
  • Ginger garlic paste  2 tbsp
  • Onion  3
  • Wheat flour  1/4 cup
  • Fennel seeds  2 tbsp
  • Dry ginger powder 2 tbsp
  • Cloves  3-4
  • Cardamom  3-4
  • All spice powder  1 tbsp
  • Chili powder 1 1/2 tbsp
  • Salt  to taste
  • Ghee  1 cup
  • Muslin cloth  as required

Ingredients For Mince Ball:

  • Beef mince 1/2 kg
  • Onion  1
  • Green chilies  2-3
  • Ginger  1 piece
  • Garlic  3-4 cloves
  • Coriander leaves  1/4 bunch
  • Roasted grams  2 tbsp
  • All spice powder  1 tsp
  • Chili powder 1 tsp
  • Salt  to taste

Method:

  1. First take a muslin cloth make a bag add fennel seeds, roasted gram.
  2. Chop the onions.
  3. Now pour ghee in a pan, add mutton bones, roast it on low temperature so that the onions becomes soft and its color changes.
  4. When the onion is nicely mashed then pour water, ginger garlic paste, along cloves, cardamom, chopped red chilies, roast it well so that its water dries.
  5. Then add water, salt, cover and let it cook.
  6. During this add mince, onion, green chilies, ginger piece, garlic, chopped coriander, roasted peas, chopped garam masala, chopped red chilies, salt, chop it well.
  7. Keeping it in mind that it is chopped well.

Ingredients For Rus Gullay:

  • Milk  1 liter
  • Sugar  4 cup
  • Kewra  1 tbsp
  • Corn flour 1/2 tbsp
  • Soap nut 2
  • Semolina 1 tbsp
  • Flour  1 tbsp
  • Lemon juice 1 tbsp
  • Muslin cloth  as required
  • Baking powder  1/4 tsp

Method:

  1. First pour milk in a pan, add lemon juice.
  2. Now take a muslin cloth filter the milk and Polly bag and hang it so that the water drain out.
  3. When the water is drained out then take out the milk on a wooden cooking board.
  4. Then put the semolina, flour, corn flour crush them with the help of hand so that it becomes smooth.
  5. Now make round rus gullay and keep it on a side.
  6. Then make a syrup of sugar and water.
  7. After that divide it into 2 pieces, and turn on heat 1 piece with water.
  8. Until the syrup becomes thick.
  9. Now add whole ritha water, so that foam appears.
  10. Then add ready rus gullay.
  11. When the rus gullay comes up while boiling then take it out and add it into syrup.
  12. Delicious rus gullay is ready.
