Behari Dum Gosht, Behari Kabab And Paratha by Chef Gulzar

Ingredient For Behari Dum Gosht:

  • Meat 1/2 kg
  • Yogurt 100 gm
  • Papaya paste 2 to 3 tbsp
  • Fried crushed onion 1
  • Ginger garlic paste 2 tbsp
  • White cumin 1 tsp
  • Crushed red chili  1 tbsp
  • All spice powder  1 tsp
  • Turmeric powder 1/2 tsp
  • Chickpeas powder 4 tbsp
  • Mustard oil 4 tbsp
  • Salt to taste

Method:

  1. First add meat pasanday, papaya paste, fried and chopped onion, yogurt, ginger garlic paste, olive oil, turmeric powder, chopped garam masala, chopped red chilies, chopped and crushed white cumin, roasted and chopped salt mix it well.
  2. Now steam it well.
  3. Then pour oil in a pan heat it.
  4. After that add coal, give it steam.
  5. In the end dish out it and serve it with salad leaves and onion then serve.

For Behari Kabab:

  • Chicken boneless 1/2 kg
  • Yogurt 100 gm
  • Fried crushed onion 1
  • Ginger garlic paste 1 tbsp
  • White cumin 1 tsp
  • Crushed red chili 1 tbsp
  • All spice powder 1 tsp
  • Turmeric powder 1/2 tsp
  • Mustard oil 4 tbsp
  • Salt to taste

Method:

For making Behari Kabab:

  1. Add chopped chicken boneless, yogurt, chopped and fried onions, ginger garlic paste, chopped and crushed white cumin, chopped red chilies, chopped garam masala, salt make its paste.
  2. Now pour oil on hands set the mixture on skewers or on BBQ steak.
  3. Then give it steam of coals.
  4. Bake it in oven or fry and give steam to coal.
  5. When it becomes ready then remove it from skewers and keep it on a side.

Ingredients For Paratha:

  • White flour 2 cup
  • Clarified butter 2 tbsp
  • Oil  for fry
  • Salt to taste

Mayo garlic sauce:

  • Chili garlic sauce 2 tbsp
  • Mayonnaise 1/2 cup

For filling:

  • Salad leaves 3 to 4
  • Cucumber 2 to 3
  • Onion 2 to 3

Method:

  1. First add flour, ghee, salt mix it well.
  2. Pour water knead it well.
  3. Now make the portions knead it well, fry it and keep it on a side.
  4. Then add chopped chili garlic sauce, mayonnaise.
  5. After that put kababs.
  6. Now put cucumber, onion make roll.
  7. In the end add salad leaves for garnishing then serve it.
