Arvi Ky Kabab, Arvi Gosht And Arvi Ky Patay by Zubaida Tariq

Ingredients For Arvi Gosht:

  • Mutton 1/2 kg
  • Colocasia  1/2 kg
  • Chopped onion 2
  • Lemons  2
  • Whole green chilies 2
  • Green chilies 2
  • Oil  1 cup
  • Green coriander 1/2 bunch
  • All spice powder 1 tsp
  • Turmeric  1 tsp
  • Ginger garlic paste 1 tsp
  • Red chili  1 tbsp
  • Salt  to taste

Method:

  1. First wash the arvi and take oil in hand paste turmeric on it.
  2. Now add mutton, chopped onion, turmeric, chopped red chilies, ginger garlic paste, oil and water cook it on low temperature.
  3. When the water dries then tender it, add arvi and whole green chilies roast it lightly.
  4. When the arvi is tendered then add lemon juice, all spice powder, chopped green chilies and chopped green coriander simmer it for 10 minutes.
  5. Serve the arvi with hot naan.

Ingredients For Arvi Kay Kabab:

  • Colocasia  1/2 kg
  • Gram flour 1 cup
  • Egg  1
  • Green chilies  3
  • Tamarind paste  1/2 cup
  • Green coriander  1/2 bunch
  • Mint leaves  1/2 bunch
  • Yogurt 1 tsp
  • Carom seeds 1 tsp
  • Cumin seeds  1 tsp
  • Red chili flakes  1 tbsp
  • Kabab masala 1 tbsp
  • Oil  to fry
  • Salt  to taste

Method:

  1. First add arvi wash it and boil it first.
  2. Now take a bowl add flour, egg, yogurt, kabab masala, chopped red chili, nutmeg, salt, green coriander, mint, tamarind juice make its paste thick. 
  3. When arvi is tendered then make it cool, peel its skin.
  4. Then take oil in hands and make the arvi oily, press it like cutlets.
  5. After that make its paste of flour for deep frying.
  6. When it becomes golden then take it out and serve it with tomato ketchup.

Ingredients For Arvi Ky Patay:

  • Colocasia leaves 6-8
  • Oil 1 cup
  • Gram flour  1 cup
  • Crushed  cumin  1 tsp
  • Carom seeds  1/2 tsp
  • Red chili powder  1/2 tbsp
  • Tamarind paste  2 tbsp
  • Salt  to taste

Method:

  1. First add arvi leaves, wash it nicely make it spread.
  2. Now take a bowl add flour, tamarind juice, nutmeg mace, chopped red chilies, salt and roasted and chopped white cumin mix it well.
  3. Then spread the leave, turn the side of leaf, spread the mixture of flour, roll its both sides.
  4. After add heat the water, put filter on it.
  5. When all the leaves becomes ready then give it steam.
  6. When one sided is steamed then change its sides.
  7. Now take it out. take a frying pan pour oil add leaves deep fry it on low temperature.
  8. When it becomes golden brown then take it out and spread it on paper.
  9. Then make its 4 pieces then serve.
