Turai Aur Aloo, Achari Karela, Bhindi Masala And Puri by Shireen Anwer

Ingredients For Turai Aur Aloo:

  • Turai 1/2 kg
  • Potatoes 1
  • Onion  2
  • Green chilies 2 to 3 chopped
  • Oil  1/4 cup
  • Tomatoes 2
  • Salt 1 tsp
  • Chili powder 1 tsp
  • Turmeric 1/2 tsp
  • White cumin seeds 1/2 tsp
  • Onion seeds  1 tsp

Method:

  1. Pour oil Add chopped onions, make them light golden.
  2. Now add kalonji, salt, chopped red chilies, turmeric, white cumin fry it well.
  3. Then add chopped green chilies make its small cubes add potatoes cook it on low temperature, until it is tendered well.
  4. Sprinkle green coriander then take it out.

Ingredients For Achaari Karela:

  • Karela 1/2 kg
  • Yogurt 1/2 cup
  • Onion 1 cup
  • Oil  1/2 cup
  • Sugar  1 tsp
  • Salt  1 tsp
  • Ginger garlic 1 tsp
  • Chili powder 1 tsp
  • Turmeric  1/2 tsp
  • Tamarind  3 to 4 pieces

Achaari Masala:

  • White cumin  1 tsp heaped
  • Onion seeds  1 tsp
  • Fenugreek seeds dry  1/2 tsp
  • Coriander seeds  2 tsp
  • Fennel seeds  1 tsp

Method:

  1. For making Achaari karela add white cumin, kalonji, chopped dry fenugreek seeds, coriander and fennel roast it well and chopped.
  2. For making karela: peel its upper skin give it cut and take out its seeds.
  3. Now sprinkle salt and leave it for 1 hour. Then wash it well.
  4. After that boil the karela pieces for 5 minutes.
  5. Now drain its water, fry it in oil then take it out.

Ingredients For Bhindi Masala:

  • Bhindi 1/2 kg
  • Chili powder 1 tsp
  • Garlic 1 tsp
  • Salt 1 tsp
  • Tomatoes 3
  • Turmeric  1/2 tsp
  • Kalonji 1/2 tsp
  • Oil  1/2 cup
  • Onion 1
  • Green chilies  4

Method:

  1. First pour oil add bhindi for frying, until it becomes brown. Then take it out.
  2. Now pour oil add garlic, salt, chopped red chilies and turmeric for frying add water.
  3. Then add tomatoes cook it on low temperature.
  4. Fry it well add green chilies and fried onions simmer it for 10 minutes then leave it.

Ingredients For Puri:

  • Flour 1 cup
  • Wheat flour 1 cup
  • Salt 1/2 tsp
  • Oil 4 tbsp
  • Baking powder  1/2 tsp
  • Water  to knead
  • Oil  for frying

Method:

  1. First take a flour, wheat, salt, oil and baking powder with water knead it well.
  2. Now make the puri and fry it in hot oil.
