Dolmas by Zarnak Sidhwa

Ingredients:

  • Mutton mince 500 gm
  • Rice 750 gm
  • Tomatoes 1/2 kg
  • Potatoes 1/2 kg
  • Cabbage 1
  • Big green chilies 6-8
  • Eggplants 2-3
  • Lemon juice 1 cup
  • Oil 1/2 cup
  • Salt 2 tbsp
  • Big red chilies 12
  • Chopped ginger 1 tbsp
  • Chopped garlic 1 tbsp
  • Roasted cumin 2 tsp
  • Garam masala 2 tsp

Method:

  1. Soak big dry deseeded red chilies in hot water.
  2. Grind together soak red chilies, chopped ginger, chopped garlic, roasted cumin seeds and garam masala.
  3. In a big bowl, mix the washed soaked rice, the masala mix, the mutton mince, oil, salt and lemon juice.
  4. Prepare vegetables by blanching the cabbage leaves, scooping out seeds from tomatoes and scooping out seeds from eggplants and the seeds from the big green chilies.
  5. Scoop out the peeled potatoes and the scooped shreds in the rice masala mix.
  6. Now take a big saucepan and spread some of the rice and masala mix in the bottom, then fill of the vegetables with rice and masala mix and plate them in the pot puffing the potatoes in first.
  7. Fill the cabbage leaves and all other vegetables and arrange in pot.
  8. Pour the rest of the remaining rice and masala mix on top.
  9. Add sufficient water to cook, Put on high flame till it comes to a boil and then simmer for an hour or so till the rice on top is cooked.
  10. You need to add some water after a while if the rice on top dries up.
  11. Dish it out and enjoy.
