Siciliano Pasta by Zarnak Sidhwa

Ingredients:

  • Farfalle pasta 2 cups
  • Olive oil 1/4 cup
  • Chopped garlic 3 cloves
  • Red chili 1 tsp
  • Lemon juice 2 tbsp
  • Pine nuts 1/2 cup
  • Black olives 1 cup
  • Dried tomatoes 1/2 cup
  • Feta cheese 1 cup
  • Salt to taste
  • Pepper to taste

Method:

  1. Bring large pot of lightly salted water to boil.
  2. Place paste in pot, cook for 8-10 minutes, until all done and drain.
  3. Heat oil, cook garlic until lightly browned.
  4. Mix in red chili crushed and lemon juice.
  5. Stir in pine nuts, olives and sun-dried tomatoes.
  6. Toss in cooked paste and feta cheese.
  7. Season with salt and pepper.
