Fig Chicken by Zarnak Sidhwa

Ingredients:

  • Lemon juice 1 lemon
  • Brown sugar 1/4 cup
  • White vinegar 1/4 cup
  • Water 1/4 cup
  • Dried figs 1-1/2 pounds
  • Lemon 1
  • Chicken 1 kg
  • Salt to taste
  • Fresh parsley 1 tbsp
  • Dried parsley 1 tsp

Method:

  1. Combine lemon juice, brown sugar, vinegar and water, set aside.
  2. Place figs and lemon slices in bottom of roasting dish.
  3. Arrange chicken on top, then pour vinegar mixture over chicken.
  4. Finally, sprinkle with salt and dried parsley.
  5. Bake roast at 200 degrees C for 50 minutes, basting frequently (turn figs if they begin to brown).
  6. Serve with garnished fresh parsley.
