Chaat Masala

Ingredients:

  • Cumin 1 cup
  • Black pepper 4-5 pcs
  • cloves 3-4
  • Black cumin 2 tbsp
  • powdered red chilli 1/2 cup
  • Black salt 1 tsp
  • dried ginger 2 tbsp
  • salt 1 tsp

Method:

  1. On a tava roast cumin,black pepper, cloves and black cumin till you can smell it then grind it in a grinder
  2. next add in powdered red chilli , black salt, dried ginger and salt
  3. mix everything together 
  4. chat masala is ready 

Dahee Bara Masala:

  • red chillies
  • white cumin 7 tbsp
  • cloves 4-5 pcs
  • black pepper 7-8 pcs
  • whole coriander 5 tbsp
  • khatai powder 1 tbsp
  • black salt 1/2 tsp

Method:

  1. On a stove roast red chillies,white cumin,cloves,black pepper and whole coriander once the smell is strong grind it in a grinder
  2. add in khatai powder and black salt
  3. mix well 
  4. dahe bare masala is ready

Vegetable Cutlets

Ingredients:

  • Potato 1/2 kg
  • green peas 1/2 cup
  • carrot 1/2 cup
  • capsicum 1/2 cup
  • Onion 1/4 cup
  • coriander 2-3 tbsp
  • green chilli 1 tbsp
  • sweet corn 1/2 cup
  • cottage cheese 1/2 cup
  • salt to taste
  • chaat masala 1 tsp
  • red chilli pwd 1 tsp
  • crushed cumin  1tsp
  • mix spice pwd 1/2 tsp
  • lemon juice 1 tbsp
  • bread crumbs for coating 
  • oil for frying 
  • green chutney for serving 
  • ketchup for serving

Method:

  1. In a bowl add mashed potatoes, vegetables, chopped onion,coriander and sweet corn
  2. Next add in salt,chaat masala, lemon juice, crushed cumin, red chilli powder, garam masala and mix well
  3. Now make cutlets out of the mixture , dip it in the egg and coat with bread crumbs
  4. Heat oil in the frying pan and shallow fry the cutlets until they are golden brown.
  5. serve with green chutney 

Green Chutney

  • coriander 2 cup
  • mint 1 cup
  • garlic 4-6 cloves
  • green chilli 10-12 pcs
  • salt to taste
  • oil as required 

Method:

  1. In a blender add coriander, mint, garlic, green chilies m salt and cumin
  2. next add in a little bit of oil while blending.
  3. green chutney is ready
