Rice Croquettes by Zarnak Sidhwa

Ingredients:

For Rice Mixture:

  • Boiled rice 1 cup
  • Corn 2 tbsp
  • Chopped coriander 2 tbsp
  • Chopped green chillies 1 tsp
  • Chopped onions 1-1/2 tbsp
  • Salt to taste
  • Roasted cumin powder 1 tsp
  • Red chilli powder 1 tsp
  • Grated cheese 2 tbsp
  • Grated paneer 2 tbsp
  • Paneer 2 tbsp
  • Breadcrumbs 2 tbsp

For Sauce:

  • Chopped tomatoes 1/2 cup
  • Chopped onions 2 tbsp
  • Chopped coriander 1-1/2 tbsp
  • Chopped green chillies 1 tsp
  • Chopped garlic 1 tsp
  • Orange zest 1 tbsp
  • Sugar 1 tbsp
  • Black olives 4- 5
  • Lemon juice of 1 lemon
  • Salt to taste
  • Crushed black pepper to taste

For Batter:

  • Flour 1/4 cup
  • Salt to taste
  • Crushed black pepper to taste
  • Red chilli powder 1 tsp
  • Flour and breadcrumbs to coat
  • Oil for frying

For Garnish:

  • Lettuce leaves 2-3 leaves
  • Black olives a few

Method:

  1. To prepare rice mixture: In bowl mash the boiled rice.
  2. Grind corn and add to rice mixture.
  3. Add chopped coriander, chopped green chillies, chopped onions, salt, roasted cumin powder, red chilli powder, grated cheese, paneer, breadcrumbs and mix well.
  4. To prepare salsa sauce: In bowl add chopped tomatoes, chopped onions, chopped coriander, chopped green chillies, chopped garlic, orange zest, sugar and mix well.
  5. Chop black olives and add to the bowl.
  6. Add lemon juice, salt, crushed black pepper and keep it aside.
  7. In bowl add flour, salt, crushed black pepper, red chilli powder, water and prepare the batter.
  8. Make balls out of rice mixture and dust flour on it.
  9. Put prepared balls in the batter and coat them with breadcrumbs.
  10. Deep fry the prepared croquettes in hot oil until golden brown and remove them on kitchen paper.
  11. Serve salsa sauce in a bowl.
  12. Serve croquettes on a bed of salad leaves.
  13. Put black olives on skewers and place on the croquettes.
