Spinach Cheesy Pasta by Zarnak Sidhwa

Ingredients:

  • Shell pasta 1 packet
  • Chopped spinach 1 cup
  • Eggs 2
  • Oil 1/4 cup
  • Bread crumbs 1/2 cup
  • Pasta sauce 1 cup
  • Grated cheddar cheese 1 cup
  • Grated mozzarella cheese 1 cup

Method:

  1. Bring large pot of salted water to boil.
  2. Add in oil and shell paste and cook for 8-10 minutes or until water dries.
  3. Bring 1/2 cup water to boil in saucepan and cook spinach 4-6 minutes until tender.
  4. Place cooked pasta in bowl.
  5. In small bowl, whisk together eggs and oil.
  6. Toss pasta with cooked spinach, egg mixture and bread crumbs.
  7. Cover bottom of greased pyrex baking dish with 1/3 of pasta sauce.
  8. Pour half of pasta mixture into baking dish and cover with another.
