Malaysian Spicy Shrimp Soup

Ingredients:

  • Oil 2-3 tbsp
  • Shrimps 250-300 gm
  • Rice noodles 1 cup
  • Garlic 2-3 cloves
  • Ginger 1
  • Lemon grass 2
  • Fish sauce 2 tbsp
  • Salt to taste
  • Red chili 4-5
  • Turmeric 1/2 tsp
  • Coconut milk 1 cup
  • Chicken stock 2 cup
  • Lemon 1
  • Tamarind pulp 2 tbsp
  • Coriander leaves 2 tbsp

Method:

  1. Put garlic, ginger, red chili and lemon grass in food processor and grind it.
  2. Heat oil in big pot, put grinded mixture and fry it.
  3. Then add fish sauce, turmeric, coconut milk, tamarind pulp and chicken stock, cook more for 10 minutes on low flame, add shrimps and cook until shrimps tender.
  4. Now add lemon juice and rice noodles, garnish with coriander leaves and serve.
