Hyderabadi Chicken Biryani

Ingredients:

  • Sela rice 2-1/2 cups
  • Chicken 1-1/2 kg
  • Yogurt 1 bowl
  • Finely chopped mint leaves 1 bunch
  • Finely chopped onions 4
  • Cloves 4
  • Whole black pepper 6
  • Lemons 6
  • Small cardamom 8
  • Finely long chopped green chilies 8
  • Oil 1 bowl
  • Fresh hot milk 1 bowl
  • Yellow color few
  • Ginger garlic paste 1 tbsp
  • Red chili powder 1 tbsp
  • Salt to taste
  • All spice few

Method:

  1. Wash chicken nicely and boil with ginger garlic paste, 1/2 bunch mint leaves, green chilies, salt,, small cardamom, black pepper, cloves and red chili powder in pot.
  2. When water dries, close stove.
  3. Now boil rice with salt, small cardamom, green chilies, all spice and few mint leaves and drain water.
  4. Then heat oil in other pot, fry onion until golden brown, spread half onion on paper and put oil in chicken.
  5. Then grease rice pot, make layer of half rice and spread chicken.
  6. Then put crushed brown onion.
  7. Then put lemon juice.
  8. Then make layer of remaining rice, put 1/2 bunch mint leaves and yellow color mixed with hot milk and simmer it.
  9. Steam comes, take out biryani in dish, put remaining onion and serve with raita.
