Ingredients:

  • Eggplant (long) 2
  • Chicken boneless boti 1/2 cup
  • Chana daal 1 cup
  • Garlic 6 cloves
  • Yogurt 1 tbsp
  • Ginger 1
  • Whole red chilies 8
  • Whole mix spice few
  • Whole coriander 1 tsp
  • White cumin 1 tsp
  • Salt to taste
  • Mint leaves 1 bunch
  • Coriander leaves 1 bunch
  • Green chilies 3
  • Finely chopped ginger 1 tbsp
  • Egg whites 3
  • Crumbs 1 packet
  • Oil for fry

Method:

  1. First chop eggplant with fork and roast on stove.
  2. Then mash it.
  3. Put chicken, chana daal, ginger, garlic, salt, whole red chilies, whole mix spice, coriander and cumin in pot and boil it.
  4. Daal should be tendered.
  5. Now put yogurt and chop in chopper.
  6. Mix 1 egg white in mince.
  7. Cut coriander leaves and green chilies finely.
  8. Then mix in eggplant pulp.
  9. Now take little little mince in hands, keep little eggplant and make kabab.
  10. Then dip in egg whites and coat with crumbs.
  11. Then shallow fry it.
  12. When golden, take it out and serve.

Baigan Bharay Shami Kabab in new variety kabab. Eggplant pulp is stuffed in chicken & chana daal mixture and shallow fried. Serve it with sauce.
