  • Eggplant 2
  • Extra virgin oil as required
  • Dried oregano 1 tbsp
  • Crushed red chili 1 tsp
  • Finely slice garlic 4 cloves
  • Fresh basil as required
  • White vinegar 2 tsp
  • Chopped tomatoes 1 cup
  • Salt, black pepper to taste
  • Spaghetti 1 packet
  • Grated parmesan cheese as required


  1. Cut eggplant into thin long stripes.
  2. Now heat little oil and fry eggplants.
  3. Then sprinkle dried oregano.
  4. Now add red chili, little oil, garlic slice and fresh basil.
  5. Now mix it nicely and add vinegar and tomatoes.
  6. Then cook it for 10-15 minutes.
  7. Now add salt and black pepper.
  8. Then boil spaghetti in salted water.
  9. Now add pasta in sauce and toast it nicely.
  10. Then take out in dish, sprinkle fresh basil and cheese and serve.

Brinjal In Pasta is tasty dish. It is new variety pasta dish. Eggplant & spaghetti is cooked and topped with cheese.
