Brinjal In Pasta
- Eggplant 2
- Extra virgin oil as required
- Dried oregano 1 tbsp
- Crushed red chili 1 tsp
- Finely slice garlic 4 cloves
- Fresh basil as required
- White vinegar 2 tsp
- Chopped tomatoes 1 cup
- Salt, black pepper to taste
- Spaghetti 1 packet
- Grated parmesan cheese as required
- Cut eggplant into thin long stripes.
- Now heat little oil and fry eggplants.
- Then sprinkle dried oregano.
- Now add red chili, little oil, garlic slice and fresh basil.
- Now mix it nicely and add vinegar and tomatoes.
- Then cook it for 10-15 minutes.
- Now add salt and black pepper.
- Then boil spaghetti in salted water.
- Now add pasta in sauce and toast it nicely.
- Then take out in dish, sprinkle fresh basil and cheese and serve.
Brinjal In Pasta is tasty dish. It is new variety pasta dish. Eggplant & spaghetti is cooked and topped with cheese.
