Kidney bean salsa

Ingredients;

  • Red kidney beans             1 cup
  • White kidney beans         1 cup
  • Green chilli                           4
  • Tomato                                  4
  • Onion                                 5 tbsp
  • Lemon juice                      5 tbsp
  • Tomato juice                   1/2 cup
  • Salt                                        1 tsp
  • Olive oil                             8 tbsp
  • Spring onion                        2
  •  Crushed red chilli            1 tbsp

Seafood paella 

Ingredients;

  • Rice                          2cups
  • Prawns                   350 gm
  • Fish boneless        400 gm
  • Oil                            8 tbsp
  • Salt                   1 -1/2 tbsp
  • Capsicum                  1
  • Boiled chickpeas   1 cup
  • Tomato                      2
  • Onion                        1
  • Garlic                      1 tbsp
  • Chilli sauce            4 tbsp
  • Chicken stock        5 cups
  • Chicken                    6 pcs
  • Saffron                   1 pinch
  • Black pepper        1/2 tsp
  • Mushroom            1/2 tin

Method;

  1. Heat oil in a pan , fry onions and garlic.
  2. Add chicken in it and saffron.  Cook for 5 minutes.
  3. Add mushrooms and fry.
  4. Then add chickpeas and 5 cup of chicken stock and salt pepper.  Let it come to a boil.
  5. After the boil add rice in it.
  6. When the water has almost dried , then add fish and prawns. Cook for a while mix well.
  7.  Now add the capsicum and tomatoes.
  8. Leave it on dum for 15 minutes.
