Masala Bheja, Gobhi Gosht And Nimki by Chef Zakir

Ingredients For Gobhi Gosht:

  • Beef undercut 1/2 kg
  • Cauliflower  1
  • Onion chopped 2
  • Oil  1/4 cup
  • Ginger chopped  1
  • Garlic chopped 3-4 cloves
  • Turmeric   1/2 tsp
  • Chili powder 1 tsp
  • Coriander powder 1/2 tbsp
  • Water 1/2 cup
  • All spice powder 1/2 tsp
  • Lemon juice 1 tbsp
  • Coriander leaves 1/4 bunch
  • Salt  to taste

Method:

  1. First add onions in a blender, pour water chop it well, along chopped ginger, chopped garlic.
  2. Now pour oil in a pan, make small pieces, fry it well, so that its water dries.
  3. Then add onion mixture roast it well, so that its color turns to brown.
  4. Now add turmeric, salt, chopped garam masala, chopped red chili, chopped coriander, lemon juice, cover and let it cook.
  5. Then pour water heat it and add cabbage pieces, keep its temperature high.
  6. Now add cabbage, mix it in a pan, water, cover and let it be on simmer.
  7. Then remove cover after 8 to 10 minutes and roast on high flame.
  8. In the end sprinkle green coriander for serve.

Ingredients For Masala Bheja:

  • Mutton brain 2
  • Chili powder 1 tsp
  • Coriander leaves 1/4 bunch
  • Green chilies chopped 2
  • Coriander powder 1 tsp
  • Turmeric  1/2 tsp
  • Turmeric 1/2 tbsp
  • Onion chopped 1
  • Oil 3-4 tbsp
  • Ginger garlic paste 1 tbsp
  • Ginger 1
  • Coriander leaves as required
  • Boiled tomatoes 2
  • Yogurt  3-4 tbsp
  • Salt to taste

Method:

  1. First pour water add turmeric, mutton brain boil it.
  2. When it is boiled then take it out and wash it, and keep it on a side.
  3. Now pour oil in a pan, add ginger garlic paste cook it well.
  4. Then add boiled chopped tomatoes, chopped red chilies, chopped coriander, turmeric, chopped onions, cook it for 3 minutes.
  5. Then add yogurt, chopped green chilies, chopped green coriander, cook it more for 1 to 2 minute.
  6. Then add boiled brain, stir it with spoon mix it and take it out in a platter, sprinkle ginger garlic then serve.

Ingredients For Nimki:

  • Flour 250 gm
  • Salt to taste
  • Oil 2 tbsp
  • Chili powder 1 tsp
  • Cumin seeds 1 tsp
  • Sesame seeds 1 tsp
  • Oil  for fry
  • Water as required

Method:

  1. First add flour, salt, chopped red chilies, oil, sesame seeds and cumin mix it well, pour some water and knead it.
  2. Keep it in mind that dough should not be remain so soft.
  3. Now roll it out like a roti.
  4. Then pour oil in a pan, add knead dough in hot oil for deep frying.
  5. When they turn to golden color take it out and serve it with tea or coffee.
