Shikam Pori Kabab And Nawabi Chicken Dum Biryani by Chef Gulzar

Ingredients For Shikam Pori Kabab:

  • Beef 1/2 kg
  • Gram lentil 150 gm
  • Garlic cloves 5 to 6
  • Ginger  1 inch
  • Big cardamom  4 to 5
  • Cinnamon  1 to 2
  • Cloves  3 to 4
  • Whole black pepper  1 tsp
  • Red chili  6-8
  • Cumin  1-2 tsp
  • Coriander  1-2 tsp
  • Yogurt  3-4 tbsp
  • Curry leaves  1-2
  • Green chilies  3-4
  • Eggs  1 to 2
  • Oil  for fry
  • Salt  to taste
  • Bread slice  as required

Method:

  1. First make the small pieces of beef.
  2. Take a pan, add pieces, gram lentils, garlic cloves, ginger, big cardamom, cinnamon, cloves, whole black pepper, whole red chilies, whole cumin, whole coriander, curry leaves, green chilies, salt and water leave it to cook.
  3. Let it cook on low temperature dry it, then take it out then cool it.
  4. After that chop it well.
  5. Add yogurt, egg and bread slices, banana slices.
  6. Then make its pieces then fry it lightly.
  7. Serve it with salad leaves and lemon.

Ingredients For Nawabi Chicken Dum Biryani:

For Rice:

  • Rice  1/2 kg
  • Cloves  2 to 3
  • Cumin  1/2 tsp
  • Star anise 1 to 2
  • Curry leaves 1 to 2
  • Salt to taste

For Chicken:

  • Chicken 1/2 kg
  • Yogurt  1
  • Sliced onion 2
  • Cloves 1/3 tsp
  • Crushed cinnamon 1/3 tsp
  • Crushed cumin 1/2 tsp
  • Crushed cardamom  1/3 tsp
  • Ginger garlic paste 2 tbsp
  • Red chili powder  1 tbsp
  • Coriander powder 1 tsp
  • Turmeric powder  1 tsp
  • Green coriander 1/2 bunch
  • Fried onion  1
  • Mint leaves  1/2 cup
  • Food color 1 pinch
  • Saffron  1 pinch
  • Oil  3 tbsp
  • Salt  to taste

Method:

For making Rice:

  1. First clean the rice and wash it.
  2. Then pour water leave it for 1 to 2 hours.
  3. Now pour water, add cloves, cumin, star anise food, curry leaves and salt boil it well.
  4. When it is boiled then boil it hard, filter it and keep it on a side.
  5. Now take a mixing bowl add cloves, chopped cinnamon, Chopped cumin, chopped black cardamom, ginger garlic paste, red chili powder, coriander powder and turmeric powder with yogurt for marination make its paste.
  6. Then marinate the chicken with this mixture.
  7. Now take a pan pour oil.
  8. Now add onions for frying, then put the marinated chicken for roasting.
  9. When the chicken is tendered then add rice, green coriander, mint leaves and onion, saffron mix it well and cover and simmer it.
  10. When the simmer is done then dish out it.
