Ingredients For Grilled Chicken Rice:

  • Boneless chicken 1/2 kg
  • Ginger garlic paste 2 tsp
  • Red chili powder 2 tsp
  • Salt 1/2 tbsp
  • All spice powder 1 tsp
  • Lemon juice  3 tbsp
  • Yogurt 1/2 cup
  • Oil 4 tbsp

For Rice Making:

  • Boiled rice 1/2 kg
  • Curry leaves 10
  • Yogurt  1/2 cup
  • Salt 1 tsp
  • Yellow Food color 1/2 tsp
  • Cumin seeds 2 tsp
  • Kewra 1/2 tsp
  • Green chilies 10
  • Star anise 6
  • Green coriander 1 bunch
  • Oil  1/2 cup

Method:

  1. First cut the chicken boneless into square pieces.
  2. Now add ginger garlic paste, chopped red chilies, salt, garam masala, lemon juice and yogurt then leave it.
  3. Now bake it in oven or grill.
  4. For rice pour oil add cumin.
  5. When it starts to smell then add yogurt, salt, green chilies, star anise flower, green coriander and green leaves.
  6. After that mix the boiled rice.
  7. Now add kewra, grilled chicken and pinch of yellow color.
  8. Pour water and simmer it for 10 minutes. 

Ingredients For Baigan Kay Cutlets:

  • Eggplant 1/2 kg
  • Soya sauce 2 tbsp
  • Vinegar 1 tbsp
  • Chopped garlic 1 tsp
  • Red chili powder 1/2 tsp
  • Black pepper 1 tsp
  • Salt 1/2 tsp
  • Bread crumbs 1 cup
  • Egg 1
  • Fried cumin seeds 1 tsp
  • Fried round red chili 1 tsp
  • Chat masala 1 tsp
  • Oil  for frying

Method:

  1. First cut the eggplant into round shape.
  2. Now add soya sauce, chopped garlic, black pepper, salt and chopped red chilies, leave it for an hour.
  3. Now beat it with egg.
  4. Then dip the eggplant into beaten egg. then roll it into bread crumbs.
  5. After that fry the eggplant in hot oil.
  6. Add roasted red chilies, roasted cumin and chaat masala then serve.
