Madrasi chicken masala

Ingredients:

  • Chicken 1/2 kg
  • salt according to your taste
  • crushed black pepper 1 tbsp.
  • vinegar 2 tbsp.
  • Ginger and garlic 1 tbsp.
  • powdered mustard (raee) 1/2 tsp
  • raisins 1 tbsp.
  • Crushed caraway seeds 1 tbsp.
  • Brown cardamoms 2
  • Oil for frying
  • onion paste 1/2 cup
  • Tomato puree 1- 1/2 cup
  • green chili paste 3 tbsp.
  • butter 4 tbsp.
  • coriander 2-3 tbsp.

Method:

  1. Heat up the oil and fry the onions. Next add in the marinated chicken
  2. when the water of the chicken gets evaporated add in the tomato puree and green chili paste and cook on low flame for 10 mins
  3. In the end add butter and coriander
  4. Madrasi chicken masala is ready

 Mayo Garlic Chicken Tikka

  • Chicken tikka 4
  • Ginger garlic 1 tbsp.
  • papaya 1-1/2 tsp
  • salt according to your taste
  • red chili powder 1 tbsp.
  • roasted coriander 1/2 tsp
  • all spices powder 1 tsp
  • yellow food colouring 1 tsp
  • yoghurt 1/2 cup
  • green chili paste 2 tbsp.
  • lemon juice 2 tbsp.
  • oil 4 tbsp.
  • mayonnaise 1 cup
  • garlic 1-1/2 tsp

Method:

  1. Marinate the chicken with Ginger , garlic , salt, red chili powder , roasted coriander , all spices powder , yellow food colouring, yogurt, green chili paste and lemon juice.
  2. Grill the chiken in the oven for 35 minutes and smoke it with some coal.
  3. Mix mayonnaise and garlic and pour it over the chicken tikka's and serve..
