Karela Chicken Roast by Zarnak Sidhwa

Ingredients:

  • Chicken 1 kg

For The Marination:

  • Turmeric powder 1/4 tsp
  • Chili powder 1/4 tsp
  • Coriander powder 1/4 tsp
  • Vinegar/Lemon juice 1 tsp
  • Ginger 1 inch
  • Garlic cloves 5
  • Green chilies 3-5
  • Salt to taste

For Roasting:

  • Onion 3 medium
  • Tomato 1 large
  • Green chilies 2
  • Curry leaves 3 sprigs
  • Garam masala 1/4 tsp
  • Black pepper 1/4 tsp
  • Lemon juice 1 lemon
  • Oil as required

Method:

  1. To make tomato paste: Blanch, remove the skin and blend a large tomato.
  2. Make a paste of all the ingredients under marination.
  3. Marinate the chicken pieces with this paste and keep aside for an hour.
  4. Cut onions into very thin sliced and fry in hot oil.
  5. Drain them and keep aside.
  6. Fry the chicken pieces in the same oil until almost done.
  7. Keep the pan covered so that the chicken is not browned, but is cooked inside.
  8. Drain them and keep aside. Heat 2 tbsp oil in another pan.
  9. Add slit green chilies and curry leaves.
  10. Saute for a minute.
  11. Add the tomato paste to this and saute for 1 minute.
  12. Now add the prepared chicken and roast until it is dry.
  13. Make sure that all the chicken pieces are well coated with the tomato paste.
  14. Sprinkle garam masala and pepper powder and mix well.
  15. Add lemon juice and mix well. Check for salt.
  16. Add a little if needed. Now add the fried onions and mix well.
