Chicken Bites by Zarnak Sidhwa

Ingredients:

  • Chicken breast 2
  • Salt to taste
  • Lemon juice 2 tsp
  • Parsley 2 tsp
  • Chopped thyme 1 tsp
  • Egg 1
  • Bread crumbs 1 cup
  • Oil deep frying
  • Parsley for garnishing

Dip:

  • Mayonnaise 4 tbsp
  • Tomato ketchup 2 tbsp
  • Paprika powder 1 tsp

Method:

  1. Slice chicken breast into bit size pieces and put in bowl.
  2. Add salt, lemon juice. 1 tsp chopped parsley and thyme.
  3. Rub the pieces well and set aside to marinate.
  4. Break egg in a bowl and beat well.
  5. Add this to the marinated chicken and mix well.
  6. Spread bread crumbs on plate.
  7. Heat oil. Coat marinated chicken pieces evenly in bread crumbs and deep fry in hot oil till golden and crisp.
  8. Drain on absorbent paper.
  9. To make dip: Combine all ingredients and mix well.
  10. Add 1 tsp chopped parsley and mix well.
  11. Garnish crispy chicken pieces with little chopped parsley and serve hot with prepared dip.
