Rajma Masala by Zarnak Sidhwa

Ingredients:

For Rajma Mix:

  • Rajma 500 gm
  • Salt to taste
  • Chopped garlic 5 cloves
  • Chopped ginger 1/2 tsp
  • Green chili 1 whole

For Tempering:

  • Oil 2 tbsp
  • Cumin seeds 1/2 tbsp
  • Cloves 1/2 tbsp
  • Black cardamom 2
  • Chopped onion 1
  • Garlic 5 cloves
  • Chopped ginger 1 tsp
  • Turmeric powder 1/2 tsp
  • Red chili powder 1 tsp
  • Coriander powder 1 tsp
  • Cumin powder 1 tsp
  • Salt 1/2 tsp
  • Chopped tomatoes 2
  • Sugar 1 pinch
  • Coriander leaves few
  • Green chili 1
  • Butter 1 tbsp
  • Curd 3 tbsp
  • Lemon juice 1/2 lemon

Method:

  1. Soak rajma overnight and pressure cook it.
  2. In pan, mix cooked rajma, 2 cups water, chopped garlic, chopped ginger, whole green chili and salt. Let it boil.
  3. While rajma is boiling, heat some oil in another pan.
  4. Add to this cumin seeds, cloves and black cardamom.
  5. Saute, crackle and fry these spices to release their flavors.
  6. Now add chopped onion,
  7. Saute till onions turn brownish.
  8. Add this to chopped ginger and chopped garlic.
  9. Saute them all together.
  10. Now add turmeric powder, red chili powder, coriander powder, cumin powder and salt.
  11. Add little bit of water.
  12. When water is dry, add tomatoes.
  13. Add pinch of sugar.
  14. Mix onions, tomatoes and spices well.
  15. Now add green chilies and some coriander leaves.
  16. Add this spice mix to pan in which rajma was boiling.
  17. Now add butter and curd.
  18. Squeeze half lemon.
  19. Simmer for about 10-15 minutes.
  20. Serve hot with rice.
