Chicken Khow Suey by Chef Gulzar

Ingredients:

For Khow Suey Paste:

  • Talhar chili 5-6
  • Onion 2
  • Garlic 10-12 cloves
  • Coriander 1 bunch
  • Coriander powder 1 tsp
  • Turmeric powder 1 tsp
  • Curry powder 1 tsp

For Khow Suey:

  • Boiled chicken 300 gm
  • Coconut milk 1 cup
  • Boiled egg noodles 1/2 packet
  • Chicken stock 1/2 liter
  • Fish sauce 2 tbsp
  • Brown sugar 2 tbsp

For Garnish:

  • Spring onion 2-3
  • Fried onion 1
  • Carrot (sliced) 1
  • Oil for fry
  • Salt to taste

Method:

  1. For khow suey paste: Soak talhar chili in lukewarm water.
  2. When chili rises, put in blender jug, add remaining ingredients and make paste.
  3. For khow suey: Heat oil in pan, add khow suey paste and roast it.
  4. Now add coconut milk and mix it.
  5. Then add chicken, stock and fish sauce, mix it and cook until it boils.
  6. Now add egg noodles and brown sugar, mix it and remove it.
  7. In end, put stock in serving bowl, then put spring onion, onion and 1/2 tsp sesame seed oil and serve with lemon slice.
