Masala Vegetable Toast by Zarnak Sidhwa

Ingredients:

  • Oil 1 tbsp
  • Onion chopped 1
  • Green chilies chopped 2
  • Capsicum chopped 1
  • Carrot grated 1
  • Salt to taste
  • Red chili powder 1/2 tsp
  • Turmeric powder 1 pinch
  • Ketchup 1 tbsp
  • Lemon juice 1/2
  • Chopped coriander leaves 1 tbsp
  • Slices brown bread 6
  • Ketchup or Chili sauce as required
  • Butter or Ghee to fry

Method:

  1. Heat 1 tbsp oil.
  2. Add onion and green chilies and saute.
  3. Add capsicum and carrot and saute.
  4. Add salt, red chili powder and turmeric. Mix well.
  5. Add ketchup, lemon juice and coriander leaves and mix.
  6. Turn off heat and remove onto plate.
  7. Toast bread on one side, spread some chili sauce or ketchup, spoon some of vegetable masala all over and toast other side of bread in few drops of ghee or butter.
