Low Fat Coleslaw

Ingredients:

  • Extra light mayonnaise 2 tbsp
  • Low fat milk 1/4 cup
  • White vinegar 1 tbsp
  • Apple vinegar 1 tbsp
  • Fresh lemon juice 1 tbsp
  • White sugar 1 tsp
  • Salt 1 tsp
  • Cabbage finely shredded 1
  • Onion minced 1
  • Carrot mince 1

Method:

  1. Whisk mayonnaise, milk, white vinegar, apple vinegar, lemon juice, salt and sugar together in bowl and allow dressing to stand white preparing vegetables.
  2. Pour dressing over cabbage, onion and carrot in large salad bowl and toss to combine.
  3. For best flavor, refrigerate coleslaw for at least 2 hours to overnight.
