Ingredients:

  • Sugar 1 cup
  • Eggs separated 8
  • Ground cinnamon 1 tsp
  • Salt 1/4 tsp
  • Zest of lemon grated 1
  • Ground almonds 1/2 cup
  • Chocolate 1 cup
  • Flour 1-1/2 cups
  • Coffee 1 cup

For Topping:

  • Silvered almonds 1/2 cup

For Chocolate Icing:

  • Chocolate chopped 8 oz
  • Water 1/2 cup
  • Milk 1/4 cup
  • Butter 1/4 cup
  • Icing sugar 1/4 cup

Method:

  1. Beat egg yolks, add sugar, cinnamon, salt and lemon zest.
  2. Add ground almonds, chocolate and flour and add in coffee.
  3. Beat egg whites until stiff.
  4. Grease and flour loaf pan or Rehrucken pan.
  5. Bake at 190 degrees C for 30-45 minutes or until done.
  6. Let cool.
  7. Remove from pan and ice when cold with chocolate icing.
  8. Insert silvered almonds in rows.
  9. For icing: Combine chocolate, water, milk in double boiler.
  10. Heat chocolate until melted.
  11. Remove, add butter and icing sugar.
  12. Stir until smooth.

Rehrucken is an Austrian pastry. It is prepared with chocolate & almonds, covered with chocolate icing & topped with almonds.
