Roast Chicken Soup

Ingredients:

  • Olive oil 1 tbsp
  • Chopped onion 2
  • Chopped carrot 3
  • Thyme 1 tbsp
  • Chicken stock 1-1/2 liter
  • Roasted chicken shredded 300 gm
  • Peas 200 gm
  • Hung yogurt 3 tbsp
  • Crushed garlic 1 clove
  • Lemon juice as required

Method:

  1. Heat oil in pan, add onion, carrot and thyme and fry for 15 minutes.
  2. Then add chicken stock, cover it and cook for 10 minutes.
  3. Then add roasted chicken, take out half mixture and blend in puree till smooth it.
  4. 'Now add remaining soup and peas and cook for 5 minutes.
  5. Then add yogurt, garlic and lemon juice, swirl it, put in soup bowls and serve.
