Corn Rice Recipe

Ingredients:

  • Rice 1 cup
  • Corn 1 cup
  • Oil 2 tbsp
  • Finely chopped onion 1
  • Turmeric powder 1/4 tsp
  • Red chili powder 1/4 tsp
  • Coriander powder 1/2 tsp
  • Salt to taste
  • Crushed coriander leaves 2 tbsp

For Green Chutney:

  • Crushed coriander leaves 1/4 cup
  • Mint leaves chopped 1 tbsp
  • Crushed ginger 1/2 inch
  • Chopped green chilies 2
  • Garlic cloves 3
  • Coconut powder 1 tbsp
  • Bay leaf 1
  • Small cardamom 2
  • Cloves 2-3
  • Cinnamon 1 inch
  • Star anise 1
  • Mace 2
  • Cumin 1/2 tsp
  • Whole black pepper 4-5

Method:

  1. Put all ingredients of chutney in blender, blend it nicely and put little water.
  2. Now heat oil in pan, onion and whole black pepper and fry it.
  3. Then put chutney, mix it and cook few seconds.
  4. Then put corn, turmeric powder, red chili powder and coriander powder and mix it nicely.
  5. Now put rice, salt and water and cook it.
  6. Then garnish with coriander leaves and serve with raita.

Corn Rice is tasty dish. Rice & corn is cooked with green chutney and served with rice. Green chutney is prepared with green chilies, coriander leaves and mint leaves.
